Subject area "Safety in the Food Chain"
Introduction
Food safety has become an issue of crucial importance to public health. The most important factors related to the increasing importance of food safety are the following: a) globalisation of food trade, b) changes in eating behaviour and food preparation habits, c) legal changes on national and international levels, d) emergence of new pathogens and toxicological or allergenic problems, e) development of sensitive methods of detection, f) new data handling and information technology possibilities, g) societal changes and increasing public interest in food safety and quality. Food safety authorities as well as the food industry have an urgent need for well-trained professionals with fundamental expertise in the whole field of food safety. This expertise can be only acquired within an international training programme.
